BAKERY • EXTRA BROOD

Bakery is a Belgian trade journal for bakeries and patissiers. In addition to recipes and (technical) articles about ingredients, machinery and techniques, each edition also features an interview with a baker.

For the September 2020 edition of Bakery, I visited Tijs Van Canneyt in his atelier in Wielsbeke for an interview and photo shoot. Tijs is a self-taught baker who focusses solely on sourdough. He does not have a store, but works with subscriptions. I, myself, have been an Extra Brood subscriber for over 2 years now.
